It can be difficult to find a late night snack in Vancouver. Many restaurants close at around 9 PM. I often head over to Breka which is a 24 hour cafe. However, sometimes I want a change of venue. I recently found Notch8 in the Fairmont Hotel Vancouver serves their lounge menu until quite late! It is the perfect setting for a late night desserts or light snacks. They also have an extensive collection of drinks at their bar sure to please the most distinguished palate.

I love walking into the Fairmont Vancouver. It is a beautiful, elegant hotel in the midst of the downtown crowds. Valet parking is available as well as a host of luxury shops. The entrance to Notch8 lies in the middle of the main floor and is easily accessible from the Burrard, Georgia, and Hornby entrances. It is important to note that there are three Fairmont hotels quite close to each other. The Waterfront, and the Pacific Rim are within walking distance but closer to the water. The Fairmont Hotel Vancouver is their historic hotel in the midst of downtown.

On this occassion, I chose the dessert Bee’s Nest. It is vanilla mousse topped with berries. On top of the glass dish lies a white chocolate ring with a meringue bee hive in the middle. A dollop of honey gets poured into the bee hive which then slowly pours out into the berries below. It is quite an intricate dessert. The honey is exquisite with the berries.

If you are not a late night dessert person, Notch8 serves up a decadent Afternoon Tea as well.
